Indulge in Gourmet Hazelnut Chocolate Chip Cookies: An Elevated Classic
While the timeless appeal of a classic chocolate chip cookie is undeniable, there’s always an exciting adventure in exploring variations that introduce new layers of flavor and texture. For us, that journey led to the creation of these extraordinary Hazelnut Chocolate Chip Cookies. By infusing the dough with one of our all-time favorite nuts – the humble yet exquisite hazelnut – we’ve transformed a childhood staple into something truly special. But we didn’t stop there. We added a secret ingredient that takes these cookies from delightful to decidedly grown-up, making them an irresistible treat perfect for sharing with friends or savoring solo.
The Allure of Hazelnut: Why This Nut Transforms Your Cookies
Hazelnuts bring a distinct character to any baked good. Their naturally buttery, slightly sweet, and earthy flavor profile pairs impeccably with chocolate, creating a symphony of tastes reminiscent of beloved confections like gianduja and Nutella. Beyond flavor, hazelnuts offer a delightful textural contrast. When chopped and folded into the cookie dough, they provide a satisfying crunch that complements the soft, chewy interior of the cookie, adding depth and interest with every bite.
To truly unlock the full potential of hazelnuts, a crucial step is toasting them. Toasting intensifies their inherent nuttiness, deepens their color, and makes them wonderfully aromatic. This simple process can be done in an oven or on a stovetop, and while optional, it makes a significant difference in the final flavor of your cookies. A quick toast not only enhances the hazelnuts’ robust taste but also improves their texture, ensuring they contribute maximum flavor to these gourmet chocolate chip cookies.

The Secret Ingredient: A Splash of Hazelnut Liqueur
What truly sets these cookies apart, transforming them from a classic favorite into a sophisticated dessert, is the addition of hazelnut-flavored liqueur. A touch of a high-quality liqueur, such as Frangelico, not only amplifies the natural hazelnut flavor but also introduces a subtle warmth and complex aromatic notes that are simply divine. This unique ingredient elevates the cookies, creating an “adults-only” treat that’s perfect for a special occasion or a cozy evening indulgence. The alcohol bakes out, leaving behind only its exquisite flavor contribution, making the cookies remarkably fragrant and deeply satisfying.
Non-Alcoholic & Alternative Liqueur Options
We understand that not everyone wishes to use alcohol in their baking, or perhaps you’d like to explore other flavor profiles. The versatility of this recipe allows for easy substitutions without compromising on taste. If you prefer to omit the hazelnut liqueur, a good quality vanilla extract or almond extract makes an excellent alternative. We recommend using about 1 and 1/2 teaspoons of your chosen extract to achieve a comparable depth of flavor. For those who enjoy experimenting with different liqueurs, Amaretto (almond), Kahlua (coffee), or even a good dark rum could introduce exciting new dimensions to these cookies, offering endless possibilities for customization.
This particular recipe draws inspiration from a beloved cookbook, Nick Malgieri’s Chocolate, a true celebration of all things cocoa. While the original recipe featured rum, our rendition leans fully into the magnificent flavor of hazelnuts, creating a consistent and immersive hazelnut experience throughout the cookie. The combination of real hazelnuts and hazelnut liqueur truly makes these a standout winner for any dessert enthusiast.

Crafting the Perfect Cookie: Beyond the Unique Flavors
The foundation of any great cookie lies in its base ingredients and the technique used to combine them. Our Hazelnut Chocolate Chip Cookies are designed to be soft and chewy in the center with perfectly crisp edges – the hallmark of an exceptional chocolate chip cookie. Achieving this balance starts with quality ingredients and mindful preparation.
Using softened unsalted butter is crucial, as it creams beautifully with the light brown sugar, creating an airy, fluffy base that contributes to the cookie’s tender texture and rich flavor. Brown sugar, with its molasses content, is key for that desirable chewiness and moisture. The combination of a whole egg and an egg yolk adds richness and helps bind the ingredients, preventing a dry or crumbly cookie.
When it comes to mixing, it’s vital to cream the butter and sugar until light and fluffy. However, once the dry ingredients are added, mix just until combined to avoid overdeveloping the gluten, which can lead to tough cookies. Gentle folding in of the chocolate chips and hazelnuts ensures they are evenly distributed without compacting the dough.
Baking to Perfection: Tips for Irresistible Results
One common question about cookie dough is whether chilling is necessary. For this particular recipe, you don’t necessarily have to chill the dough before baking. We often bake the first batch immediately after mixing, then chill the remaining dough until we’re ready for more. This approach works wonderfully unless you’re baking in a particularly warm kitchen, which can cause the butter to melt too quickly, leading to flatter cookies. If your kitchen is warm, or if you prefer to prepare the dough in advance, chilling it for at least 30 minutes (or up to a couple of days) can help firm up the butter, resulting in a slightly thicker, chewier cookie. Otherwise, feel free to go straight from mixing to scooping!
Uniformly sized cookies are essential for even baking. Using a 1-tablespoon cookie scoop ensures each cookie bakes consistently, reaching that perfect golden-brown hue at the edges while remaining gloriously soft in the middle. Keep a close eye on your cookies as they bake; they should look set and lightly golden. Overbaking can lead to dry, hard cookies, so err on the side of slightly underbaked for maximum chewiness.
Customizing Your Hazelnut Chocolate Chip Experience
While the hazelnut and chocolate combination is a match made in heaven, this recipe offers a fantastic canvas for your creativity. Feel free to experiment with other nuts such as pecans, walnuts, or macadamias for different flavor profiles. You could also swap out semisweet chocolate chips for dark chocolate chunks for a more intense cocoa hit, milk chocolate for a sweeter profile, or even white chocolate chips for a delightful contrast. A sprinkle of flaky sea salt on top of the warm cookies fresh out of the oven can also enhance all the flavors, providing a wonderful sweet and salty balance.
Serving Suggestions and Memorable Moments
These Hazelnut Chocolate Chip Cookies are always a resounding success when shared. Their soft, chewy texture and rich, complex flavor make them truly irresistible. Storing Your Delicious Creations
Proper storage is key to maintaining the freshness and incredible flavor of your Hazelnut Chocolate Chip Cookies. Simply place them in a freezer-safe container or a heavy-duty freezer bag, and they will keep well for up to 3 months. When you’re ready to enjoy them, thaw them on the countertop until they reach room temperature. For an extra touch of warmth and gooeyness, you can gently reheat them in a microwave for a few seconds.

These Hazelnut Chocolate Chip Cookies are packed with plenty of chocolate chips, hazelnuts, and a splash of liqueur for some seriously amazing flavor, offering a delightful twist on a classic.
Ingredients
- 1 & 2/3 cups (200g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup (170g) unsalted butter, softened
- 1 cup (200g) firmly packed light brown sugar
- 1 tablespoon hazelnut-flavored liqueur (such as Frangelico), or 1 1/2 teaspoons vanilla/almond extract
- 1 large egg
- 1 large egg yolk
- 2 cups (340g) semisweet chocolate chips
- 1 cup (120g) chopped hazelnuts*
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper or silicone liners for easy cleanup.
- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until well combined. Set this dry mixture aside.
- Using an electric mixer on medium speed, beat the softened unsalted butter and firmly packed light brown sugar in a large bowl until the mixture is light and fluffy. This typically takes about 2-3 minutes. Add the hazelnut liqueur (or chosen extract), the large egg, and the large egg yolk, mixing well until fully incorporated and smooth.
- Reduce the mixer speed to low. Gradually add the prepared flour mixture to the wet ingredients, mixing just until everything is combined. Be careful not to overmix, as this can result in tough cookies.
- Gently stir in the semisweet chocolate chips and the chopped hazelnuts by hand, ensuring they are evenly distributed throughout the dough.
- Drop the cookie dough by 1-tablespoon portions onto the prepared baking pans, spacing them a few inches apart. Bake one pan at a time for 10 to 12 minutes, or until the edges of the cookies are golden brown and the centers are still slightly soft.
- Allow the cookies to cool on the baking pans for 5 minutes after removing them from the oven. This helps them set and prevents breakage. Then, carefully transfer the cookies to a wire rack to cool completely.
Notes
*For an even richer and more intense hazelnut flavor, consider toasting your hazelnuts before chopping and adding them to the dough. Spread them on a baking sheet and toast in a 350°F (175°C) oven for 7-10 minutes, or until fragrant. Let them cool before chopping.
