Ingredients

For the Spice Cake Doughnuts:

  • 1 & 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon ground cloves
  • 1/3 cup unsalted butter, softened
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup sour cream

For the Vanilla Bean Glaze:

  • 3/4 cup confectioners’ sugar
  • 3 to 4 tablespoons milk
  • 1/2 teaspoon vanilla bean paste*

Instructions

To Make the Doughnuts:

  1. Preheat your oven to 350°F (175°C). Lightly grease a 6-cavity doughnut pan to prevent sticking.
  2. In a medium bowl, whisk together the all-purpose flour, ground cinnamon, ground ginger, baking powder, baking soda, salt, ground nutmeg, ground allspice, and ground cloves until well combined. Set this dry mixture aside.
  3. In a separate large bowl, using an electric mixer on medium speed, beat the softened unsalted butter and packed brown sugar until the mixture is light and fluffy, usually 2-3 minutes. Add the large egg and vanilla extract, mixing well until fully incorporated.
  4. Reduce the mixer speed to low. Gradually add the flour mixture in three portions, alternating with two portions of sour cream, beginning and ending with the flour. Mix just until combined; be careful not to overmix. The batter will be quite thick.
  5. Evenly divide the thick batter among the prepared doughnut pan cavities, filling each almost full.** This ensures you get that classic doughnut shape.
  6. Bake for 12 to 15 minutes, or until a wooden pick or toothpick inserted into the center of a doughnut comes out clean, indicating they are fully cooked.
  7. Allow the baked doughnuts to cool in the pan for about 10 minutes. Then, carefully remove the doughnuts from the pan and transfer them to a wire rack to finish cooling completely before glazing.

To Prepare the Vanilla Bean Glaze:

  1. In a small bowl, whisk together the confectioners’ sugar, 3 tablespoons of milk, and the vanilla bean paste until smooth. If the glaze is too thick, add more milk, one teaspoon at a time, until you achieve your desired pouring consistency.
  2. Once the doughnuts are fully cooled, dip the top of each doughnut into the prepared glaze. Place the glazed doughnuts glaze-side up back onto the cooling rack, allowing the glaze to set for about 15-20 minutes. Serve and enjoy!

Notes

*If you don’t have vanilla bean paste, you can substitute the seeds scraped from half of a fresh vanilla bean for an authentic flavor and visual appeal, or use 1/2 teaspoon of good quality vanilla extract.

**For optimal results and the classic doughnut shape, you’ll typically use about 3 to 4 tablespoons of batter for each doughnut cavity. Filling them almost to the top is key. Don’t worry if you have a bit of batter remaining after filling all cavities – it’s better to have perfectly shaped doughnuts than to overfill them.
