Ingredients

  • 1 cup (99 g) old-fashioned rolled oats
  • 1 cup (240 ml) buttermilk
  • 8 ounces (226 g) cream cheese, softened
  • ¼ cup (50 g) granulated sugar
  • ½ teaspoon vanilla extract
  • 1 cup (120 g) all-purpose flour
  • ¾ cup (150 g) packed light brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg, lightly beaten
  • ¼ cup (56 g) unsalted butter, melted and slightly cooled
  • 1 cup sweet cherries, pitted and quartered

Instructions

  1. Preheat oven to 350°F (175°C). Line 12 standard muffin cups with paper liners.
  2. Combine the oats and buttermilk in a medium bowl. Let stand for 10 minutes to allow the oats to soften.
  3. In a separate bowl, using an electric mixer on medium speed, beat the softened cream cheese, granulated sugar, and vanilla extract until completely smooth and well combined. Set this cream cheese filling aside.
  4. In a large bowl, whisk together the all-purpose flour, light brown sugar, baking powder, baking soda, and salt until thoroughly combined.
  5. To the oat and buttermilk mixture, add the lightly beaten egg and the slightly cooled melted butter. Stir until all ingredients are well incorporated. Pour this wet mixture into the flour mixture, stirring gently with a spatula or wooden spoon just until no dry streaks of flour remain. Be careful not to overmix. Gently fold in the pitted and quartered sweet cherries.
  6. Prepare your muffin cups. Place about 2 tablespoons of the muffin batter into the bottom of each lined muffin cup. Carefully top this with 1 ½ to 2 tablespoons of the prepared cream cheese filling. Finally, spoon the remaining muffin batter over the cream cheese filling, ensuring each cup is almost full (approximately two-thirds to three-quarters full).
