Ingredients

  • 3 & 1/2 cups (280g) quick-cooking oats
  • 1 cup (120g) chopped pecans*
  • 1 large egg, lightly beaten
  • 2/3 cup (150g) butter, melted
  • 1/3 cup (112g) honey
  • 1 teaspoon vanilla extract
  • 3/4 cup (85g) dried cranberries*
  • 1/2 cup (88g) mini chocolate chips*
  • 1/2 cup (70g) sunflower seeds*
  • 1/4 cup (40g) chopped toffee bits*
  • 1/2 cup (200g) packed brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F. Line a 15″x 10″ jelly roll pan with parchment paper.
  2. Combine the oats and pecans, and spread in an even layer on the prepared pan. Bake 8-10 minutes, stirring occasionally, until toasted.
  3. In a large bowl, combine the egg, butter, honey, and vanilla. Add the cranberries, chocolate chips, sunflower seeds, toffee, brown sugar, and cinnamon. Mix until combined.
  4. Add the oats and almonds, and mix well.
  5. Re-line the pan with parchment paper so that the paper overhangs an inch or two on the two long sides. Spread the mixture evenly and firmly in the pan.
  6. Bake 13-18 minutes, or until the edges are slightly browned and the bars are set. Cool in the pan on a wire rack for 10 minutes. Then use the parchment paper to lift the bars out of the pan onto the wire rack to continue cooling. Cut into bars.**

*Use any combination of add-ins you like – nuts, dried fruits, seeds, etc. Just keep the total amount about 3 cups.

**You may find the bars cut more cleanly if refrigerated for about 30 minutes before cutting.
