  • 1 cup (110 g) confectioners’ sugar, plus more for dusting
  • 2 teaspoons vanilla extract
  • 2 cups (240 g) all-purpose flour
  • ½ teaspoon salt
  • 1 cup (120 g) chopped pecans

Instructions

 

  1. Preheat oven to 350°F (175°C). Grease or line baking pans.
  2. Using an electric mixer on medium speed, beat the butter and confectioners’ sugar until light and fluffy. Add the vanilla, and mix well.
  3. Reduce mixer speed to low. Add the flour and salt, mixing until almost combined. Stir in the chopped pecans. Finish mixing the dough with your hands until fully incorporated.
  4. Pinch off about 2 teaspoons of dough and roll into balls using a circular motion with your hands. Then, roll the dough balls using a back-and-forth motion to shape them into small logs. Place the dough on the prepared baking pans, spacing them evenly.
  5. Bake for 15 minutes, or until the edges are lightly browned. Allow the cookies to cool for about 5 minutes on the baking pans. Then, carefully transfer them to cooling racks to cool completely. While the cookies are still warm, liberally sprinkle them with additional confectioners’ sugar for that classic “snow-dusted” finish.
