Ingredients

  • 2 ¼ cups (270 g) all-purpose flour
  • 1 teaspoon cornstarch
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup (170 g) unsalted butter, softened to room temperature
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) firmly packed light brown sugar
  • 1 large egg, at room temperature
  • 1 large egg yolk, at room temperature
  • 2 teaspoons pure vanilla extract
  • ¼ teaspoon almond extract, optional but recommended
  • 1 cup (170 g) semisweet chocolate chips
  • 1 cup (170 g) white chocolate chips
  • cup rainbow sprinkles, preferably jimmies for no color bleed

Instructions

  1. In a medium bowl, thoroughly whisk together the all-purpose flour, cornstarch, baking soda, and salt until well combined. Set this dry mixture aside.
  2. In a large mixing bowl, using an electric mixer or stand mixer fitted with a paddle attachment on medium speed, beat the softened unsalted butter, granulated sugar, and firmly packed light brown sugar together for approximately 3-4 minutes, or until the mixture becomes light, creamy, and visibly fluffy.
  3. Beat in the large egg and the additional large egg yolk one at a time, ensuring each is fully incorporated before adding the next. Scrape down the sides of the bowl as needed to ensure all ingredients are well mixed. Then, add the pure vanilla extract and almond extract (if using), mixing just until combined.
  4. Reduce the mixer speed to low. Gradually add the whisked dry ingredients to the wet ingredients, mixing only until a soft dough forms and no streaks of flour are visible. Be extremely careful not to overmix the dough at this stage.
  5. Gently fold in the semisweet and white chocolate chips along with the vibrant rainbow sprinkles using a spatula. If you wish to garnish your cookies for a bakery-style finish, reserve about ¼ cup of chocolate chips and a tablespoon of sprinkles for topping the cookies later.
  6. Cover the bowl containing the cookie dough with plastic wrap and refrigerate for a minimum of 2 hours. For optimal flavor development and to prevent excessive spreading during baking, chilling the dough overnight is highly recommended.
  7. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats; this will ensure easy removal and consistent baking.
  8. Using a 3-tablespoon cookie scoop (#20 size), portion the chilled dough and roll each portion into a smooth ball between your palms. If you reserved sprinkles, gently dip the tops of each dough ball into the sprinkles to coat them beautifully. Place the dough balls on the prepared baking sheets, ensuring you leave approximately 2 inches between each cookie for adequate spreading.
  9. Bake one pan at a time for 14-16 minutes. The cookies are perfectly baked when their edges are lightly golden brown, but their centers still appear slightly soft and perhaps a bit underbaked. This ensures a wonderfully chewy interior.
  10. Remove the baking pans from the oven and immediately place them on a wire rack. While the cookies are still warm and pliable, if you reserved any chocolate chips, carefully press them onto the tops of the cookies for a professional, melty appearance. Allow the cookies to cool on the baking sheet for 5 minutes to set properly before carefully transferring them directly to a wire rack to cool completely.

Notes

  • Store baked and completely cooled cookies in an airtight container at room temperature for up to 3 days to maintain optimal freshness.
  • Unbaked cookie dough can be frozen for up to 3 months. To bake from frozen, simply add a few extra minutes to the baking time.
  • Baked cookies can also be frozen for up to 3 months. Thaw them at room temperature for 1-2 hours before serving for the best texture.
