Ingredients

  • 12 ounces Werther’s Original® Baking Caramels (about 40 caramels), unwrapped
  • 1/4 cup milk

For the Fudgy Brownie Layer:

  • 10 ounces bittersweet chocolate, coarsely chopped
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder

Instructions

  3. Evenly press the crust mixture into the bottom of the prepared baking pan. Ensure it’s compact and covers the entire base.
  4. Bake the crust for 25 to 30 minutes, or until it appears lightly browned around the edges. Remove from the oven and allow the crust to cool completely on a wire rack.

To Create the Gooey Caramel Layer:

  1. Place the unwrapped Werther’s Original® Baking Caramels and milk in a microwave-safe bowl. Heat in the microwave in 30-second intervals, stirring thoroughly after each heating, until the caramels have fully melted and the mixture is smooth and creamy. This process usually takes a total of 3 to 4 minutes.
  2. Once the caramel mixture is smooth, spread it evenly over the completely cooled shortbread crust. Leave a small border of about 1/2-inch along the edges.
  3. Place the pan in the refrigerator and chill for approximately 1 hour, or until the caramel layer is firm enough to support the brownie batter.

To Bake the Fudgy Brownie Layer:

  1. Adjust your oven temperature and preheat it to 350°F (175°C).
  2. In a microwave-safe bowl, combine the chopped bittersweet chocolate and unsalted butter. Heat at half power in the microwave in 30-second increments, stirring after each, until the butter is melted and the chocolate is smooth when stirred. Set aside to cool slightly.
  3. In a large mixing bowl, using a whisk or an electric mixer on medium speed, combine the granulated sugar, packed brown sugar, large eggs, and vanilla extract.
