Caramel Peanut Blondies

  • 2 cups (240g) all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (226g) unsalted butter, melted and slightly cooled
  • 2 cups (400g) firmly packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (190g) caramel bits
  • 1 cup (125g) chopped unsalted roasted peanuts*
  • 1 to 2 pinches coarse salt (optional)

Instructions

  1. Preheat oven to 350°F. Grease a 9″x 13″x 2″ baking pan.
  2. Whisk together the flour, baking powder, and salt. Set aside.
  3. Using an electric mixer on medium speed, beat the butter and brown sugar until thoroughly combined. Add the eggs and vanilla, and mix well.
  4. Reduce mixer speed to low. Gradually add the flour mixture, mixing just until combined.
